Gillis & George Poll

Gillis and George Poll are restaurateurs who grew up in Manhasset, New York. With roots in a New York City food service business dating back to the 1920s, they opened their first restaurant in 1980, Pappas in Williston Park, later known as Riverbay Seafood Bar & Grill. Since then, through hard work, attention to detail, and a commitment to hospitality, they’ve grown a respected group of restaurants across Long Island.

Their portfolio includes Bryant & Cooper Steakhouse, Majors Steakhouse, Cipollini Trattoria & Bar, Toku Modern Asian, Bar Frites, Hendrick’s Tavern, and The Bryant in Huntington. Each concept reflects their passion for quality food, welcoming service, and memorable dining experiences.

Their latest expansion takes them to South Florida with the opening of Toku in Aventura, a destination for upscale Modern Asian cuisine blending Chinese, Japanese, and Thai influences in a high-energy setting with a lively bar and lounge. Toku Aventura brings the signature Poll experience to the growing and vibrant area of Aventura, offering bold flavors, dynamic design, and an atmosphere that’s both sophisticated and Inviting.
